($56.00 per bottle / $571.20 per case) As the weather gets cooler and cooler by the minute, it is rapidly becoming California Cabernet season. Napa Valley is notorious for producing robust Cabernet Sauvignon and the region is coming off a string of noteworthy vintages including the 2002 vintage.
Spring Mountain, a hilly sub-district of Napa, is no exception producing unique and exceptional California Cabernet Sauvignon due to the mountainous terrain of the vineyard sites. The appellation is above the fog layers allowing cool, moist air to enter the valley and spill down over the Spring Mountain vineyards. Mountain grown fruit, because of the huge temperature fluctuations from day to night, are powerful yet elegant throwing off gorgeous aromas of dark chocolate, roasted coffee and a hint of menthol.
One standout among all others in the Spring Mountain District is the 2002 Spring Mountain Vineyard, 'Estate Bottle' Cabernet Sauvignon. This wine displays an intriguing fusion of cassis, chocolate and berry pie filling with hints of violet and mint. The palate is full bodied and lush with chewy tannins and flavors that echo bitter-sweet chocolate and blackberries. The finish is all satin and silk with nuances that linger like a fond memory. Mouth-filling and substantial, this wine's concentrated flavors position the vintage to age beautifully over time, yet fully enjoyable now. This wine is fantastic with a chewy quality that any Cabernet lover will enjoy. I drink this wine with steak and creamed spinach at a local steakhouse on a regular basis. No matter how many times I order this bottle, I'm always impressed with how good it is and how it displays new and enjoyable characteristics. Even during the appetizer, I enjoy this wine with tomato mozzarella and warm brickoven bread with a slab of butter or even dipped in olive oil.
