THE REVIEW

I'll be in the kitchen this weekend preparing a surprise Valentine's Day dinner. The main course will be halibut poached in olive oil with grilled vegetables and I'll be pouring one of my favorite white blends, the 2005 Vare Bianco.
    A unique blend of Ribolla Gialla, Tocai Friulano, Pinot Grigio and Sauvignon Blanc comes from only the finest selection of Northern Italian grapes producing a white wine that is minerally yet creamy, rustic yet refined. The wine has wonderful citrus elements (from the Tocai Friulano and Pinot Grigio) and a delicious nutty finish (from the Ribolla Gialla).
    This wine has incredible versatility, nuanced flavors and a distinctly Northern Italian style despite coming from Napa Valley. Very mild oak allows the Italian varietals to really show their character. The wine has a dry mineral base supported by acidity from the Sauvignon Blanc that keeps it terrifically balanced.
    This is an extremely limited wine with only 90 cases made. It is only available in a unique sized 500ml bottle (bigger than a 375ml half bottle and a touch smaller than the standard 750ml). Vare Bianco is a terrific complement to seafood, cheese, or simply on its own. Enjoy!Read More »
