What is it about Robert Sinskey's POV Cabernet blend that is impossible to stop at one glass? The newly released 2012 vintage (a great vintage by the way) impressed us like so many past vintages.
Robert Sinskey's wines are some of the most coveted in California; however, most people don't know that Robert Sinskey employs organic and biodynamic farming practices - a nice bonus - without any compromise in quality. Robert Parker has described POV as, "Fine wine from organic vines." By using organic and biodynamic sustainable farming practices, no chemicals or pesticides are used allowing POV to reveal the truest expression of the fruit. Notes of ripe plum, blueberries, dried herbs and spice fill the glass. But there is so much more: a blast of wild fennel, a dash of vanilla, and a touch of dark chocolate and violet! Impressive structure underpins the flavors, inviting culinary suitors.
The 2012 POV resembles a Bordeaux blend of Cabernet Sauvignon, Merlot and Cabernet Franc. Enjoyable now, POV possesses plenty of balanced structure to put down for five years. It is perfect for pairing with any of your favorite meat dishes, especially grilled or roasted food of any kind. Did I mention it was a great vintage? Enjoy!
