Today's Bourgogne is a cut above your typical village level Pinot Noir. Domaine Coillot's Bourgogne Rouge comes from a privileged Pinot Noir parcel just outside of one of Burgundy's most prestigious villages: Gevery-Chamertin. The wine's sense of place shines through. Bright, ruby-red and luminous in the glass, wonderfully perfumed with notes of lush raspberries, lavender, violets and eucalyptus. The palate is warm and spicy with a deliciously long finish. Beef Burgundy? Naturally, but serve it alongside roasted seasonal squash and onions topped with lardons, duck confit or your favorite creamy cheese.
2015 may arguably be the best vintage in over a decade and, sadly, it was followed by one of the worst, which means there is going to be a Burgundy drought very soon...so stock up on these cherries now!
