From summer to winter, Chablis is a chameleon. You can dress it up with a rich piece of fish, like grilled salmon, or dress it down with a salad.
There is always a Christian Moreau Chablis chilled in my refrigerator - literally all year round.
If you have been following us over the years, you have seen us feature Christian Moreau's Chablis almost every vintage. That's because we've tried to find a better village Chablis and simply cannot find one that surpasses its quality.
Moreau is the largest holder of Grand Cru vineyards in Chablis. Yields for his 2016 vintage were small but produced a classic white with elegance and wonderful Burgundian minerality. Though the wine sees no oak, it has a richness and creaminess about it that leaves you begging for a second glass. Boasting lemon, apple, smoke and flint aromas, the wine is smooth and long, with a bright, refreshing finish. Aromatics of green fruit, oyster shells and saline notes slide into a racy and pure middle.
Don't be afraid to enjoy this wine on the warmer side of cold as great whites show their finest qualities at slightly warmer temperatures.
