The elegance of the 2018 vintage cannot be understated and shows itself beautifully in this wine. White flower, blanched almond, green apple, and lemon zest... all subtle, all integrated, all leading up to zippy, racy acidity that lingers on the palate. It neither pushes nor pulls; rather everything seems to glide effortlessly in a finish that never ends.
Puligny-Montrachet, Meursaults, and Corton-Charlemagnes - they are all sensational white Burgundies. But for every day, you cannot beat the value of Chablis. It is more accessible in terms of price and food pairing.
Because of their quality and value, Vaillons are often the first snatched up of all the 1er Crus; the Vaillon soil is rich with clay and minerals from fossilized shells of pre-historic oysters and adds unmistakable depth to the wine.
I enjoyed this wine over two days; on day two it was just as lively and delicious as the first sip!
