Attention Bordeaux fans! If you like Bordeaux, you will love Andrew Will's Ciel du Cheval from the Red Mountain region of Washington.
    Known for his delicious Bordeaux-style blends, Andrew Will is one of the finest producers in Washington State. His 2008 Ciel du Cheval Vineyard is a superb blend of nearly equal parts Cabernet Franc, Cabernet Sauvignon and Merlot.
    What makes Washington State so unique - in particular the Red Mountain region - is the terroir. As Jim Holmes, the owner of Ciel du Cheval Vineyards so aptly stated, it's about "dirt and climate and climate and dirt." The bedrock of the Columbia Basin is basalt based, created from historic lava outflows which sit beneath sediment deposited by ancient floods. Add to that the 45 degree temperate swings from day to night and two additional hours of daylight, and you have a unique formula for perfection.
    When you pull the cork and pour this wine into your glass you will notice the intense dark ruby color. On the nose this wine shows a spectacular melange of dark forest fruit along with subtle earthy notes. Spicy, lavishly layered, impeccably balanced and structured, this wine is approachable now and will age beautifully for 7-10 years. It is a marvelous pairing with gamey meats, rich beef stews and strong pungent cheese. Enjoy!

A classic Bordeaux blend from one of Washington State's best producers. Ciel du Cheval boasts musky aromas of currant, smoked meat and coffee. Juicy, spicy and bright, with firm acids giving definition and lift to the soil-driven flavors of currant, black cherry and cocoa powder.
